This banana bread is the perfect healthy snack for an afternoon treat or even a pre-workout breakfast. Made with simple ingredients, it’s ready in less than an hour. Bake it over the weekend and enjoy it throughout the week!

Ingredients
- 2 large very ripe bananas
- 2 eggs
- 1 ⅓ cups oat flour (or substitute with whole wheat, spelt, or regular flour)
- ⅓ cup olive oil
- ¼ cup milk of choice
- 1 container Greek yogurt
- ½ cup honey (or maple syrup)
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 pinch of salt
- Walnuts and dark chocolate chips (optional)
Instructions
- Preheat the oven to 325°F (163°C).
- In a large mixing bowl, mash the bananas.
- Add Greek yogurt, honey, eggs, and olive oil to the mashed bananas. Whisk until well combined.
- Stir in cinnamon, vanilla extract, salt, and baking soda. Mix until blended.
- Add the flour and mix until just combined. Do not overmix.
- Gently fold in chocolate chips and chopped walnuts (if using).
- Pour the batter into a loaf pan lined with parchment paper.
- Sprinkle extra chocolate chips, walnuts, and a dash of cinnamon on top.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool on a wire rack before slicing.
