A perfect balance of crunch, creaminess, and bold flavors, this Peanut Glass Noodle dish is a delicious fusion of savory, nutty, and fresh ingredients, this meal is both satisfying and wholesome. Light yet packed with protein and nutrients, it’s a quick and flavorful dish that’s perfect for lunch or dinner. Enjoy it as is or add chicken or prawns for an extra protein boost!

Ingredients
- ½ red onion, sliced
- 1 carrot, julienned
- ½ zucchini, julienned
- ½ aubergine, diced
- 50g canned corn
- 2 eggs
- 200g glass noodles
- Sesame seeds, for garnish
- 6 tbsp sesame oil
- 1 tbsp soy sauce
- ½ green pepper, sliced
- Optional: Chicken or prawns for extra protein
For the Peanut Sauce
- 5 tbsp peanut butter
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp fish sauce (optional)
- 2 tbsp lime juice (you can substitute it for lemon juice)
- 1 tbsp honey
- 4 tbsp hot water
- Optional: Chili oil if you love spicy
Instructions
Prep the Veggies
Chop all vegetables into thin slices or julienne them for even cooking.

Make the Sauce
In a bowl, mix the soy sauce, fish sauce, lime juice, and sesame oil. Whisk well, then add the peanut butter and honey, and hot water to help it blend smoothly. Stir until creamy.
I prefer to use a salad dressing mixer as I find it easier to obtain an even, creamy texture.

Stir-Fry the Vegetables
Heat a pan over medium-high heat and add 3 tbsp sesame oil. Once hot, add all the vegetables and 1 tbsp soy sauce. Sauté for about 7 minutes. Tip: don’t overcook the veggies, as we want them to be crunchy.

Cook the Noodles
Place the glass noodles in a bowl and pour boiling water over them. Let them sit for 5 minutes (or as indicated in package instructions).
Rinse & Strain
Drain the noodles and rinse them under cold water to prevent overcooking and sticking.
Combine Everything
Add the noodles to the pan with the sautéed vegetables. Pour in the peanut sauce and stir for 1-2 minutes until everything is well coated.

Fry the Eggs
In a separate pan, heat a little sesame oil and fry the eggs to your liking.
Plate & Serve
Serve the noodles in bowls, top with the fried eggs, and sprinkle with sesame seeds.
