This Mediterranean-inspired summer bowl brings together halloumi cheese, brown rice, roasted vegetables, and a cool Greek yogurt sauce. It’s easy to prepare, ideal for warm weather, and made mostly from ingredients you likely already have at home or can easily find at the grocery store.
You will see some of the ingredients listed can be changed. You can swap red onion for regular onion, brown rice for white rice, etc. Feel free to adapt as you see fit!
Ingredients
This halloumi bowl is built from a few basics:
- Brown rice – a hearty base with a nutty flavor
- Halloumi cheese – grilled until golden brown with a high melting point that holds shape under heat
- Cucumber – crisp and cooling, great for summer produce
- Roasted cherry tomatoes and red onion – caramelized under medium heat for depth
- Black olives – for salt and contrast
- Greek yogurt – served at room temperature with a little olive oil, lemon juice, and fresh rosemary
- Toasted bread – drizzled with olive oil
- Optional: A quick cucumber tomato salad or a pinch of salt and red wine vinegar to finish
This is a great option for an easy dinner, especially if you’re cooking for one or two. You can prep most of it in advance and assemble it fresh.
Method
- Cook the brown rice according to package instructions. Fluff with a fork and set aside.
- Slice the halloumi into slabs. Add to a hot pan or large skillet with a drizzle of olive oil. Cook until golden brown on both sides. The high heat gives the halloumi its signature crust.
- Roast the tomatoes and red onion. Toss them with a pinch of salt and a little olive oil, then roast or sauté until soft and slightly charred.
- Make the yogurt sauce. Mix Greek yogurt with lemon juice, olive oil, and a few crushed black olives. Add chopped rosemary or fresh mint if you like.
- Toast the bread in a frying pan or under the grill. Add a drizzle of olive oil on top.
- Assemble in a medium bowl. Layer brown rice, roasted vegetables, cucumber, halloumi slices, and the yogurt sauce. Add olives and bread on the side.
Tips
- Use medium heat when frying the halloumi so it doesn’t burn before it browns.
- Let the yogurt sit out for a few minutes before serving to take the chill off.
- This dish keeps well and can be packed for lunch.
- Swap brown rice for bulgur, white rice or couscous if needed.
