This halloumi quinoa power bowl is the easy, high-protein lunch you’ll actually look forward to

This year we’ve been experimenting with bowls, just like our Mediterranean Halloumi Summer Bowl Recipe You’ll Love or The Ultimate All Seasons Salad with Quinoa, Roasted Veggies & Crispy Feta.
This one is a fluffy quinoa and golden grilled halloumi piled up with creamy avocado, crisp cucumber, sweet cherry tomatoes, juicy peach, blueberries, crunchy hazelnuts, and olives. The whole thing comes together in about 20 minutes.
Whether you’re easing into a September reset or just want lunches that don’t leave you reaching for a snack an hour later, this one’s perfect to save for a lazy day.
Why we love it
- It’s genuinely filling. Between the halloumi, quinoa, avocado, and nuts, you get protein, fibre, and healthy fats in every bowl.
- Meal-prep friendly. Cook the quinoa and prep the components ahead, then assemble in minutes all week.
- Sweet-savoury combo. Salty halloumi and olives play against sweet peach and blueberries.
- Vegetarian and gluten-free. A wholesome lunch that quietly suits a lot of eaters and can be made vegan with the swap of one ingredient.
Ingredients
Makes 2 generous bowls.
For the bowls:
- 1 cup quinoa, cooked (about 3 cups cooked)
- 1 block (225g / 8oz) halloumi, sliced
- 1 ripe avocado, sliced
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- 1 ripe peach, cut into chunks
- ½ cup blueberries
- ¼ cup hazelnuts (toasted is lovely)
- A handful of kalamata olives
- Olive oil, for grilling and drizzling
For the simple dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice (or red wine vinegar)
- Salt and freshly ground black pepper, to taste
A few notes on the ingredients:
The beauty of a power bowl is that it’s a formula, not a strict recipe. Quinoa is our base of choice because it’s a complete protein and cooks in 15 minutes, but any grain works. Halloumi is the savoury anchor that can be switched for any other type of protein you like. And the fruit (peach and blueberries here) is what makes this bowl special: don’t skip it, because those little pops of sweetness against the salty halloumi and olives are what make it worth it in my opinion.
How to Make It
Step 1: Cook the quinoa. Rinse 1 cup quinoa, then simmer in 2 cups water for about 15 minutes, until the water is absorbed and the grains are fluffy. Fluff with a fork and let it cool slightly. Make it ahead of time to save time.
Step 2: Prep your toppings. While the quinoa cooks, slice the cucumber, halve the cherry tomatoes, slice the avocado, and chop the peach into chunks. Line everything up so building your bowl is quick.
Step 3: Grill the halloumi. Heat a drizzle of olive oil in a non-stick pan over medium-high heat. Cook the halloumi slices for 2–3 minutes per side, until deeply golden and crisp at the edges.
Step 4: Whisk the dressing. Stir together the olive oil, lemon juice, and a pinch of salt and pepper.
Step 5: Build your bowls. Spoon the quinoa into two bowls and arrange the avocado, tomatoes, cucumber, peach, blueberries, olives, and hazelnuts in colourful sections around it. Tuck the warm halloumi on top, drizzle with the dressing, and finish with a little extra salt and pepper.
Tips for the best power bowl
- Grill the halloumi last, it’s best straight from the pan.
- Toast your nuts. A few minutes in a dry pan adds real crunch.
- Cook quinoa in broth instead of water for a deeper, savoury base.
- Keep your sections separate when you build the bowl, as it looks beautiful and lets everyone dress their own.
- Season as you go. A little salt on the tomatoes and avocado.

Easy swaps
Use what’s in your fridge. Here’s how to riff:
- Grain: swap quinoa for brown rice, farro, couscous, or bulgur.
- Protein: halloumi is our favourite, but grilled chicken, chickpeas, or a soft-boiled egg all work.
- Fruit: peach and blueberries are a dreamy summer combo, but as the seasons turn, try pomegranate, apple, pear, or fig for a cosier, autumnal spin.
- Veg: roasted sweet potato, shredded carrot, baby spinach, or roasted peppers are all great.
- Crunch: pumpkin seeds, almonds, or pine nuts instead of hazelnuts.
- Extra creamy: a spoonful of hummus or tzatziki on the side never hurts. Mediterranean Halloumi Summer Bowl Recipe You’ll Love is a creamier version of this that we love for autumn.
If you’ve been stuck in a sad-desk-lunch rut, let this halloumi quinoa power bowl be your reset. It’s filling, colourful, and easy enough to become a genuine habit. Master the formula once and you’ll be building your own versions all season long.
Give it a try, and pin it for later so it’s ready the next time you want a lunch that makes you feel good. We’d love to know what you piled into yours!
